SAVE FOR YOUR NEXT COMFORT MEAL Ingredients: Handful spinach 3 tbsp extra virgin olive oil 1 medium avocado 3 tbsp lemon juice ¼ cup roasted pine nuts Zest from 1 lemon 2–3 garlic cloves (depending on how much you love garlic) ½ cup grated Parmesan ½ cup canned coconut milk Salt & pepper 1 cup pasta water (or more) Pasta of choice To make:u2028Cook your pasta according to package instructions. Save 1 cup of pasta water before draining. Blend the remaining ingredients, adding only * ¼ cup of the reserved pasta water, using a hand blender or food processor. If your sauce is too thick, add more pasta water slowly until it’s just right. Pour your sauce into the same pot you cooked your pasta in. Keep it on medium-low heat, stirring until it thickens. If it gets too thick, add more pasta water. Toss in your pasta, stir for a few more minutes, and finish with extra Parm. Serve, devour, and enjoy that creamy goodness.
